Mediterranean cuisine was chosen because of the obvious health benefits of vegetables, whole grains, olive oil, fish, fruits and nuts. This fact has been extensively written about in the world press because of recent long term studies carried out by the Harvard School of Public Health and the University of Athens Medical school. Much has also been published about the positive effects of moderate consumption of red wine. Secondly this concept was selected because of the wide-spread popularity in Thai society for Italian-Mediterranean cuisine. Thirdly, the concept of the true wine bar with a good selection of quality wines by the glass was a niche not being served in Bangkok. Fourth, the bistro concept with its friendly, class mixing, social meeting place image, where good food is necessitated by the drinking of good wine, fit the traditional club concept.
